Finger Licking Good Garlic Parmesan Fingerling Potatoes

While grabbing a few things from the grocery store earlier today, I ran across some fingerling potatoes on clearance for just 99 cents at a local Kroger.  Now, these potatoes I have never tried before, but when I see a deal – especially on food – I usually go for it.  When I got home I immediately went online for a way to prepare them.

After searching through Google, Foodnetwork and Pinterest, nothing caught my eye other than a unique way that you can slice them.  Many recipes called for just cutting them in half length wise, but there was also another way to slice them so that they would look something similar to corkscrew fries.  It just looked pretty to me, so I made note of it.

 

Everything else about this recipe, I made up myself on a whim. I wanted something quick and easy to prepare with what I already had in the kitchen. I think this recipe does the trick.  These potatoes were tender, moist, and deliciously good!  They are also healthier than fried potatoes.  You give it a try and let me know how you liked them too.  Recipe below.

  1. Slice your washed potatoes width-wise on a cutting board, stopping just shy of cutting all the way through the potato. I usually use a wooden spoon to assist me. I place each potato on the spoon and it helps to prevent me from slicing it completely.
  2. Transfer your potatoes into a large bowl and add your garlic powder, salt, pepper, chopped onion, parsley flakes and spreadable butter. Drizzle your olive oil over your potatoes then stir together carefully with a wooden spoon until all ingredients are well blended together.
  3. Spread your potatoes evenly in a glass casserole dish - I use size 8 x 11 1/2. Place in oven in middle rack, uncovered for 45 minutes on 350 degrees.
  4. Once taken out the oven, sprinkle with your Parmesan cheese and serve while hot with a dollop of sour cream or ranch dressing. Can we say, YUMMY?!?!

    Already pinned this I believe! Big fan of potatoes (and garlic tastes good on pretty much anything) especially now the colder days are coming up – will definitely try to make this.
